I would say it's done by '/cl_avidemo 30' and virual DUB, tutorials about this can be found online.
something like

1. '/record hax' in game
2. Rage/Make footage
3. '/stoprecord'
4. '/demo hax' (to play the demo made earlier)
5. '/cl_avidemo 30' to make the continuous screenshots
6. install and run virtual Dub
7. load all screenshots made into the virtual Dub
8. Link/Attach all the screenshots to make an .avi file

there our some tutorials that are more in depth on the internet, I just said it quickly

@impz got around to watching it! very nice video keep it up.
